Dinner

BEEF AND BROCCOLI INGREDIENTS:

1 pound of milanesa beef, thinly sliced

2 cups of fresh broccoli florets

2 onions, sliced

2 Pouches of beef and broccoli sauce

1 cup of Jasmine rice

Instructions:

  1. Prep Like a Pro

Start by prepping all your ingredients. Give the broccoli a quick rinse under cold water and chop it into bite-sized florets. Thinly slice the onions and set them aside. For the milanesa beef, ensure it's thinly sliced and ready to cook.

At the point that your beef and broccoli mixture is about done cooking your going to drop 1 cup of jasmine rice, rinsed to the point the water is clear of milky starch from the rice, to 1 cup water and 1 tbsp of butter to prevent rice from sticking, into the rice cooker to steam as you complete the eggrolls.  So, have your rice and rice cooker prepped and set aside for later.

  1. Sizzle and Stir

Heat a tablespoon of oil in a large skillet over medium-high heat. Once the oil is hot, add the sliced onions and sauté until they turn golden brown and caramelized, about 5-7 minutes.

  1. Beefy Goodness

Now, it's time to add the star of the show – the milanesa beef! Add the thinly sliced beef to the skillet with the caramelized onions. Stir-fry the beef until it's cooked through and starts to brown, about 3-5 minutes.

  1. Green Goodness

Once the beef is nicely browned, toss in the broccoli florets. Stir-fry everything together for another 2-3 minutes, allowing the broccoli to soften slightly while still retaining its vibrant green color.

  1. Sauce It Up

Now, for the pièce de résistance – the beef and broccoli sauce! Pour the entire bottle of sauce over the beef and broccoli mixture in the skillet. Give everything a good stir to ensure that every morsel of beef and broccoli is coated in that savory sauce.

  1. Simmer and Serve

Reduce the heat to low and let the beef and broccoli simmer in the sauce for another 5-7 minutes, allowing all the flavors to meld together beautifully. Once done, give it a final taste test and adjust the seasoning if needed.

  1. The Perfect Rice

Here is where you drop your pre-prepped Jasmine rice into the rice cooker to steam for approximately 10-15 minutes until perfection. Once the rice is nice and fluffy and your other pairing are complete, you aren’t going to just spoon the rice onto the plate! You take the measuring cup that comes with the rice cooker and you lightly pack it with finished rice until full.

Now, you gently turn the full cup upside down on the plate and release so that your jasmine rice molds stays in place for presentation.

NOW TO THE EGGROLL INGREDIENTS:

1 package of store-bought vegetable blend (commonly includes cabbage, carrots, and other veggies), I suggest Taylor Farms 14-ounce Coleslaw mix.

10-12 eggroll wrappers

1 tablespoon of vegetable oil, plus extra for frying

Soy sauce and sweet chili sauce, for dipping (optional)

INSTRUCTIONS

  1. Prepare the Vegetable Filling

If your Taylor Farms vegetable blend is not already finely chopped as you like, give it a quick pulse in a food processor to achieve a finer texture.

Heat a tablespoon of vegetable oil in a skillet over medium-high heat. Add the Taylor Farms vegetable blend to the skillet and sauté until they are tender, about 5-7 minutes. Remove from heat and let the filling cool slightly.

  1. Roll 'Em Up

Lay out an eggroll wrapper on a clean surface, with one corner pointing towards you (like a diamond shape). Place a spoonful of the vegetable filling in the center of the wrapper. Fold the bottom corner up over the filling, then fold in the sides, and roll tightly to enclose the filling.

Seal the edge with a dab of water to ensure it sticks together. Repeat with the remaining wrappers and filling. If using the right amount of water is intimidating to you, it’s perfectly fine to poke the roll with toothpick for frying and remove prior to serving.

  1. Fry Until Golden

Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C). Carefully add the eggrolls to the hot oil, a few at a time, and fry until they are golden brown and crispy, about 2-3 minutes per side. Use a slotted spoon to transfer the cooked eggrolls to a plate lined with paper towels to drain off any excess oil.

  1. Serve and Enjoy

Once all the eggrolls are fried to perfection, arrange them on a serving platter. You can serve them hot alongside your beef and broccoli meal. For dipping, offer soy sauce and sweet chili sauce on the side for an extra burst of flavor.
